Super Easy Tortilla and Taco Cookbook: Make Meals Fun, Delicious, and Easy with Taco and Tortilla Recipes Everyone Will Love is an excellent cookbook for everyone who loves tortillas and tacos. Included are small articles on history of the foods, as well as equipment needed, and recipes for basic tortillas, both corn and flour (several varieties of flour tortillas). The chapter on making tortillas is excellent, and includes step-by-step instructions, although it would be better if there were photographs of each step.

This cookbook includes recipes for yummy fillings as well as different sauces. There is even a guide to cheeses used in Mexican cooking.

After the basics, Griffith has included easy recipes for several famous and not-so-famous dishes – all made with some sort of tortillas. Many have beautiful photographs.

The recipes (which are mostly quite easy) are written in the traditional manner with a list of ingredients followed by step-by-step instructions that are easily followed by both beginning and advanced cooks. There are also helpful and interesting comments at the beginning of each recipe. As a bonus, there are also a few very silly jokes that will appeal to kids and adults with a sense of humor.

Although I wish there were more photos, this is still an excellent, 5 star cookbook for anybody who loves tortilla based dishes. The author has, however, made up for it with mouthwatering recipes. It is a cookbook that will be used in my kitchen often to the delight of my family, and is definitely recommended for anyone who loves Mexican dishes.
